Unlike traditional tomatoes, tomatillos grow inside a papery husk that turns brown as the fruit ripens. Harvest when the fruit fills the husk and remains firm and bright green—perfect for adding a tart, citrusy kick to Mexican and South American dishes. Plant at least two for proper pollination and a high-yielding harvest!
