Beet – Early Wonder Microgreens Seeds are a chef and home cook favorite, known for their mild earthy flavor and vibrant red stems. These microgreens are a perfect topping for grilled meats, mixed into salads, or enjoyed on their own. Ready to harvest in 15–25 days, these baby beets grow indoors and thrive year-round with temperatures between 65°F–75°F. Harvest when they develop their cotyledons or the first true leaves, depending on your flavor preference. For a continuous supply of fresh greens, sow every 7 to 14 days.

Harvesting: When seedlings emerge, the first pair of leaves to show are the cotyledons, which can look very different from the leaves that follow, called “true” leaves. Beet microgreens are ready to harvest 15 to 25 days after sowing, when they have cotyledons, or when the first true leaves have begun to form, depending on preference. Cool growing temperatures may slow the expected amount of days to maturity. Using scissors, cut microgreens just above the soil line when you are ready to use them.
